Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a bowl, mix the grated Parmesan cheese, breadcrumbs, garlic powder, lemon zest, dried oregano, paprika, salt, and pepper until well combined.
Pat the cod fillets dry with paper towels and place them on the prepared baking sheet. Drizzle olive oil over the fillets.
Press the Parmesan mixture onto the top of each cod fillet, ensuring an even coating.
Bake in the preheated oven for about 15-20 minutes or until the cod is cooked through and the crust is golden brown and crispy. The fish should flake easily with a fork.
Remove from the oven and let sit for a few minutes.
Garnish each fillet with fresh parsley and serve with lemon slices on the side.
