Instructions
In a large mixing bowl, combine the rolled oats, almond butter, and honey (or maple syrup). Mix until well blended.
Add the lemon zest, lemon juice, poppy seeds, salt, and vanilla extract. Stir until all the ingredients are evenly incorporated.
If using, add in the chia seeds and shredded coconut, mixing until they are fully combined.
Once mixed, cover the bowl with plastic wrap and refrigerate the mixture for about 30 minutes. This will help it firm up for easier rolling.
After chilling, scoop out small portions of the mixture (about 1 tablespoon each) and roll them into bite-sized balls.
Place the energy bites on a baking sheet lined with parchment paper.
For an extra touch, roll the energy bites in a bit of shredded coconut or poppy seeds before placing them on the sheet.
Refrigerate the finished energy bites for another 15-20 minutes to set.
