long-grain white rice

vegetable broth (or water)

fresh lime juice

fresh cilantro, chopped

Instructions
Rinse the rice under cold water until the water runs clear, then drain thoroughly.
In a medium saucepan, combine the rinsed rice and vegetable broth (or water), and bring to a boil over high heat.
Once boiling, reduce the heat to low, cover, and simmer for about 15 minutes, or until the rice is tender and the liquid is fully absorbed.
After the rice is cooked, remove it from heat and let it sit covered for an additional 5 minutes.
Fluff the cooked rice with a fork and drizzle the olive oil over it.
Add the lime juice, lime zest, garlic powder, cumin, and salt, stirring to combine all ingredients evenly.
Finally, gently fold in the chopped cilantro until it's evenly distributed throughout the rice.
Taste and adjust salt and lime juice if desired.
Notes
Serve in a bowl, garnished with additional cilantro and lime wedges.
