In a large mixing bowl, combine rolled oats, almond butter, honey (or maple syrup), and vanilla extract. Stir until a thick mixture forms.
Add in the ground spices: cinnamon, ginger, cardamom, cloves, and black pepper. Mix well until all the spices are evenly distributed.
If desired, fold in the mini chocolate chips and chopped nuts for added texture and flavor.
Once well combined, use your hands to form small bite-sized balls (about 1 inch in diameter) from the mixture. If the mixture is too sticky, dampen your hands with a little water to help shape the bites.
Place the energy bites on a parchment-lined baking sheet or plate.
Refrigerate for about 30 minutes to allow them to firm up.
Store any leftover bites in an airtight container in the refrigerator for up to a week or in the freezer for longer storage.
