Instructions
In a large pot, heat olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until it becomes translucent.
Stir in the minced garlic and cook for an additional minute, making sure it doesn’t burn.
Add the shredded chicken, white beans, green chilies, cumin, chili powder, smoked paprika, and chicken broth to the pot. Stir well to combine.
Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 20 minutes, allowing the flavors to meld.
Add in the corn and lime juice, stirring to incorporate. Simmer for another 5-10 minutes until the corn is heated through.
Season with salt and pepper to taste.
Serve hot, garnished with fresh cilantro and a dollop of sour cream or Greek yogurt if desired.
