Instructions
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large mixing bowl, combine the peanut butter, granulated sugar, and brown sugar. Beat until smooth and creamy.
Add the egg and vanilla extract, mixing well until fully incorporated.
In a separate bowl, whisk together the baking soda, salt, and all-purpose flour. Gradually add the dry ingredients to the peanut butter mixture, stirring until a dough forms.
Using your hands, roll tablespoons of dough into balls and then roll each ball in granulated sugar. Place them on the prepared baking sheet about 2 inches apart.
Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
As soon as you remove them from the oven, gently press a chocolate kiss into the center of each cookie. Return to the oven for another 1-2 minutes to let the chocolate slightly melt.
Remove from the oven and cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
Arrange the cookies on a decorative platter and serve them with an extra bowl of chocolate kisses on the side for guests to enjoy.
