Instructions
Preheat your oven to 425°F (220°C).
In a large mixing bowl, whisk together the maple syrup, Dijon mustard, olive oil, garlic powder, dried thyme, salt, and pepper until well combined.
Add the carrots to the bowl, and toss them in the maple-mustard mixture until they are evenly coated.
Line a baking sheet with parchment paper for easy cleanup. Spread the coated carrots in a single layer on the baking sheet.
Roast the carrots in the preheated oven for 25-30 minutes, tossing halfway through, until they are tender and slightly caramelized.
Once cooked, remove them from the oven and let cool for a few minutes.
Serve warm, garnished with freshly chopped parsley if desired.
