Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper for easy cleanup.
In a mixing bowl, combine the maple syrup, melted coconut oil, ground cinnamon, salt, and vanilla extract. Whisk together until well blended.
Add the raw almonds to the bowl and stir until all the almonds are evenly coated with the maple cinnamon mixture.
Spread the coated almonds onto the prepared baking sheet in a single layer.
Roast in the preheated oven for 12-15 minutes, stirring halfway through, until the almonds are golden brown and fragrant. Keep a close eye on them to prevent burning.
Remove from the oven and let the almonds cool on the baking sheet. They will become crunchier as they cool.
Optional: Once cooled, mix in dried cranberries or raisins for an extra touch of flavor and sweetness.
