Instructions
In a mixing bowl, combine the coconut milk, pureed mango, maple syrup, vanilla extract, and a pinch of salt. Whisk together until the ingredients are well incorporated.
Add the chia seeds to the mixture and stir thoroughly to ensure the seeds are evenly distributed.
Cover the bowl with plastic wrap or transfer the mixture to an airtight container. Refrigerate for at least 4 hours or overnight, allowing the chia seeds to absorb the liquid and thicken the pudding.
Once set, give the pudding a good stir. If it’s too thick, feel free to add a splash more coconut milk to achieve your desired consistency.
To serve, spoon the chia pudding into bowls or glasses, and top with fresh mango cubes and a sprinkling of shredded coconut.
Notes
For a sweeter pudding, adjust the amount of maple syrup or honey to taste.
