Preheat your grill or oven to medium-high heat (about 400°F/200°C). If using an oven, line a baking sheet with parchment paper.
In a small bowl, mix together the honey, olive oil, diced jalapeños, smoked paprika, garlic powder, salt, and pepper to create a spicy honey glaze.
Brush the corn ribs generously with the honey glaze on all sides.
Place the corn on the grill or in the oven. If using an oven, roast for about 20-25 minutes, turning occasionally, until the corn is tender and has grill marks. If grilling, cook for about 10-15 minutes, turning every few minutes for even cooking.
Once cooked, remove the corn ribs from the heat and drizzle any remaining glaze over them while they are hot.
Garnish with fresh cilantro and serve with lime wedges on the side for an extra zesty kick.
