Instructions
If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
In a medium bowl, whisk together the honey, minced garlic, soy sauce, grated ginger, lemon juice, olive oil, salt, and pepper to create the marinade.
Add the shrimp to the bowl, ensuring they are well coated in the marinade. Cover and let them marinate in the refrigerator for 30 minutes to 1 hour for enhanced flavor.
Preheat your grill or grill pan over medium-high heat.
Thread the marinated shrimp onto the soaked skewers, about 4-5 shrimp per skewer.
Grill the skewers for 2-3 minutes on each side or until the shrimp are opaque and slightly charred, making sure to brush any excess marinade on them during grilling.
Remove the skewers from the grill and let them rest for a couple of minutes.
Garnish with chopped chives or parsley before serving.
