Instructions
In a large mixing bowl, combine the shredded chicken breast and Greek yogurt, mixing until the chicken is well coated.
Add the finely chopped celery, halved grapes, slivered almonds, and chopped red onion to the bowl, folding gently to combine.
In a small bowl, whisk together the Dijon mustard, honey, lemon juice, salt, and pepper until smooth.
Pour the dressing over the chicken mixture and toss gently until everything is evenly coated.
Taste and adjust seasoning with more salt and pepper if needed.
Chill the salad in the refrigerator for at least 30 minutes to let the flavors meld.
Serve the chicken salad on a bed of greens or in a sandwich, and garnish with fresh dill or parsley.
