Instructions
Preheat your oven to 425°F (220°C).
In a large mixing bowl, combine the olive oil, minced garlic, oregano, paprika, salt, and pepper. Mix well to create a marinade.
Add the sweet potato wedges to the bowl and toss them thoroughly in the marinade until evenly coated.
Arrange the coated sweet potato wedges in a single layer on a baking sheet lined with parchment paper for easy cleanup.
Bake in the preheated oven for 20 minutes, then remove from the oven and sprinkle the grated Parmesan cheese over the wedges.
Return to the oven and bake for another 10-15 minutes or until the sweet potatoes are crispy and golden brown.
Once done, remove from the oven and let cool slightly. Sprinkle with fresh parsley before serving.
Notes
Serve warm and garnish with fresh parsley.
