Instructions
Preheat your oven to 425°F (220°C).
In a large mixing bowl, combine the cubed sweet potatoes, minced garlic, olive oil, dried rosemary, dried thyme, smoked paprika, salt, and pepper.
Toss everything together until the sweet potatoes are evenly coated with the oil and spices.
Spread the sweet potatoes in a single layer on a large baking sheet, ensuring they’re not overcrowded. This allows them to roast evenly.
Roast in the oven for about 25-30 minutes, flipping them halfway through, until they are tender and golden brown.
Remove from the oven and let them cool slightly.
Transfer to a serving dish and garnish with fresh parsley before serving.
Notes
For best results, do not overcrowd the baking sheet.
