honey

Instructions
Preheat your oven to 400°F (200°C).
In a small saucepan, melt the butter over medium heat. Add the minced garlic and cook for 1-2 minutes until fragrant but not browned.
Remove the saucepan from the heat and stir in the thyme and honey. Season with salt and pepper to taste.
In a large baking dish, toss the baby carrots with the garlic butter mixture until evenly coated.
Spread the carrots out in a single layer on the dish.
Roast in the preheated oven for 25 to 30 minutes, stirring halfway through, until the carrots are tender and caramelized.
Remove from the oven and sprinkle with fresh parsley before serving.
Notes
For extra flavor, you can add a pinch of red pepper flakes.
