Instructions
Preheat your oven to 350°F (175°C). Line a 9x13-inch baking pan with parchment paper, allowing some overhang for easy removal.
In a bowl, whisk together the flour, baking soda, baking powder, and salt. Set aside.
In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar together until light and fluffy, about 2-3 minutes.
Add in the eggs one at a time, mixing well after each addition. Incorporate the vanilla extract and continue to mix until fully combined.
Gradually add the dry ingredient mixture to the wet ingredients, mixing on low speed until just combined. Avoid overmixing.
Fold in the rainbow sprinkles gently with a spatula until evenly distributed.
Spread the cookie dough evenly into the prepared baking pan, smoothing the top with a spatula.
Bake for 20-25 minutes, or until the edges are golden and a toothpick inserted into the center comes out clean.
Allow the bars to cool in the pan for about 15 minutes, then use the parchment overhang to lift them out and cool completely on a wire rack.
Once cooled, spread your favorite frosting over the top and sprinkle with additional rainbow sprinkles for decoration.
Slice into squares and serve!
