shelled edamame (fresh or frozen)

tahini

Instructions
If using frozen edamame, steam or boil them in salted water for about 5-7 minutes until tender, then drain and cool slightly.
In a food processor, combine the cooked edamame, tahini, olive oil, minced garlic, lemon juice, and sesame oil.
Pulse the mixture until it starts to break down, scraping the sides as needed.
Gradually add water, 1 tablespoon at a time, until the desired creamy consistency is achieved.
Season with salt and pepper to taste, then blend again to incorporate.
Once smooth, taste and adjust seasoning or add more lemon juice if desired.
Transfer the edamame hummus to a serving bowl.
Drizzle a bit of olive oil on top and sprinkle with red chili flakes and fresh herbs for an added kick and color.
Notes
Serve with sliced vegetables or warm pita bread for dipping.
