Instructions
Preheat your oven to 225°F (110°C). Line a large baking sheet with parchment paper.
Wash and dry the apples. Using a mandoline slicer or a sharp knife, slice the apples into thin rounds (about 1/8 inch thick). Remove any seeds as you go.
In a small bowl, combine the granulated sugar, ground cinnamon, and a pinch of salt.
In another bowl, toss the apple slices with lemon juice to prevent browning.
Sprinkle the cinnamon sugar mixture over the apple slices, ensuring they are evenly coated. You may want to do this in batches for an even coating.
Arrange the apple slices in a single layer on the parchment-lined baking sheet, making sure they do not overlap.
Bake in the preheated oven for about 1.5 to 2 hours, until the apple chips are crispy. Flip the slices halfway through for even baking.
Once done, remove from the oven and let cool completely. The chips will continue to crisp up as they cool.
Store the cooled apple chips in an airtight container at room temperature.
