In a large mixing bowl, combine the rolled oats, chopped dried cranberries, dark chocolate chips, chia seeds, and a pinch of sea salt. Stir well to combine.
In a separate small bowl, mix together the almond butter, honey (or maple syrup), and vanilla extract until smooth.
Pour the wet mixture into the bowl with the dry ingredients; mix thoroughly until everything is well combined and no dry oats remain.
Using your hands or a small cookie scoop, portion out the mixture and roll it into small balls, about 1 inch in diameter.
Place the energy bites on a lined baking tray and refrigerate for at least 30 minutes to firm up.
Once set, remove them from the fridge and store in an airtight container. These bites can keep for up to a week in the fridge.
