In a large pot of boiling salted water, cook the gnocchi according to package instructions until they float to the surface. Drain and set aside.
In a large skillet, heat olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
Stir in the shredded chicken, chopped spinach, and Italian seasoning. Cook until the spinach has wilted, about 2-3 minutes.
In a large mixing bowl, combine the cooked gnocchi, garlic chicken mixture, Alfredo sauce, and half of the mozzarella and Parmesan cheese. Mix until well combined. Season with salt and pepper to taste.
Transfer the gnocchi mixture into a greased 9x13 inch baking dish. Sprinkle the remaining mozzarella and Parmesan cheese evenly on top.
Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden brown.
Once baked, remove from oven and let it cool for a few minutes before serving. Garnish with fresh parsley.
