Season the chicken breasts with Cajun seasoning, salt, and pepper, ensuring they are well coated.
Drizzle olive oil on the grill and add the chicken. Cook for about 6-7 minutes on each side or until the chicken is fully cooked and reaches an internal temperature of 165°F (75°C).
Once cooked, remove the chicken from the grill and let it rest for a few minutes, then slice into thin strips.
In a large mixing bowl, combine the chopped Romaine lettuce, Caesar dressing, and grated Parmesan cheese. Toss until the lettuce is well coated.
Lay out the flour tortillas, and evenly distribute the Caesar salad mixture in the center of each tortilla.
Top the salad with sliced Cajun chicken and crushed croutons if using.
Roll up each tortilla tightly, folding in the sides as you go to create a wrap.
Slice each wrap in half diagonally and arrange on a serving platter. Garnish with chopped parsley for added flair.
