Instructions
Preheat your oven to 350°F (175°C) and lightly grease a mini muffin tin with melted butter.
In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt until combined.
In a separate bowl, mix the milk, egg, and melted butter until well blended.
Pour the wet ingredients into the dry ingredients and stir gently until just combined (some lumps are okay).
Carefully fold in the fresh blueberries, being mindful not to overmix.
Using a spoon or a small ice cream scoop, fill each muffin cup about three-quarters full with the batter.
Bake in the preheated oven for 12-15 minutes, or until the pancake bites are golden brown and a toothpick inserted into the center comes out clean.
Allow the pancake bites to cool in the tin for a few minutes before transferring them to a wire rack to cool slightly.
Notes
Serve warm with a drizzle of maple syrup and a few extra blueberries on top for an appealing presentation.
