Instructions
In a large skillet, heat the olive oil over medium heat. Add the diced sweet potatoes and a pinch of salt. Sauté for about 10-12 minutes, stirring occasionally, until they are tender and slightly caramelized.
Add the chopped red onion and red bell pepper to the skillet with the sweet potatoes. Cook for another 5 minutes, until the veggies start to soften.
Stir in the minced garlic, paprika, and cumin. Cook for an additional minute until fragrant.
Push the sweet potato mixture to the side of the skillet, creating space in the center. Add the diced chicken pieces to the center and season with salt and pepper. Cook the chicken until it's browned and cooked through, about 7-8 minutes.
Once the chicken is fully cooked, pour the BBQ sauce over the mixture in the skillet. Stir well to combine everything and let it simmer for another 2-3 minutes, allowing the flavors to meld together.
Remove the skillet from heat and garnish with freshly chopped cilantro before serving.
